Ingredients:

  • 1 Cup Unsalted Butter
  • 3/4 Cup Granulated Sugar (plus an additional 1/4 cup for rolling the cookies)
  • 1/2 Cup Light Brown Sugar
  • 1 Large Egg
  • 2 Teaspoons Vanilla Extract
  • 1/2 Teaspoon Salt
  • 2 Teaspoons Baking Powder
  • 1/4 Cup Unsweetened Cacao Powder
  • 2 Cups All-Purpose Flour
  • 30 to 35 Large Chocolate Chips (see note below on making large chocolate chips)
  • Optional: Christmas Sprinkles

Instructions:

  1. Preparation: Preheat your oven to 350°F and line two baking sheets with parchment paper. Place 1/4 cup granulated sugar in a small bowl for rolling the cookie dough.
  2. Cookie Dough: In a large mixing bowl or stand mixer, cream together butter, 3/4 cup granulated sugar, and brown sugar until fluffy. Integrate the egg, vanilla, salt, and baking powder. Gradually mix in the cacao powder and flour, adding the flour a half cup at a time. Chill the dough for 15 to 20 minutes to firm up.
  3. Forming Cookies: Shape the dough into 1 1/2-inch balls. Roll three sides of each dough ball in granulated sugar and dip the fourth side in Christmas sprinkles if using. Arrange the dough balls on the prepared baking sheets, spaced about 2 inches apart. Press a large chocolate chip into the center of each ball.
  4. Baking: Bake the cookies for about 10 minutes, until they are just set but still soft. Allow to cool on a wire rack.
