French Onion Soup with Sourdough Recipe
Ingredients:
- 3 medium onions
- 2 medium shallots
- 3 garlic cloves
- 2 bay leaves
- 1 bunch of thyme
- 1 bunch of sage
- 1 teaspoon of dark brown sugar
- 2 tablespoons of flour
- 1 cup of dry white wine
- 6 cups of beef or vegetable broth
- Salt and pepper to taste
- Sourdough bread, sliced and toasted
- Gruyere cheese, grated
Instructions:
- Prepare Ingredients:
- Thinly slice the onions, shallots, and garlic cloves.
- Tie the bay leaves, thyme, and sage together with kitchen twine to create a bouquet garni.
- Caramelize Onions:
- In a large pot or Dutch oven, heat olive oil over medium-low heat.
- Add the sliced onions, shallots, and garlic cloves to the pot. Cook, stirring occasionally, until caramelized and golden brown, about 30-40 minutes.
- Sprinkle dark brown sugar over the onions and continue cooking for an additional 5 minutes until caramelized.
- Make Soup Base:
- Sprinkle flour over the caramelized onions and cook for 2-3 minutes, stirring constantly.
- Slowly pour in the dry white wine, scraping any browned bits from the bottom of the pot.
- Add the bouquet garni and beef or vegetable broth to the pot. Bring to a simmer and cook for 20-25 minutes, allowing the flavors to meld together.
- Toast Sourdough Bread:
- Preheat the broiler in your oven.
- Place slices of sourdough bread on a baking sheet and toast under the broiler until golden brown and crispy on both sides.
- Serve:
- Remove the bouquet garni from the soup and season with salt and pepper to taste.
- Ladle the soup into oven-safe bowls. Place a slice of toasted sourdough bread on top of each bowl.
- Sprinkle grated Gruyere cheese over the bread slices.
- Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes.
- Serve hot, garnished with fresh thyme leaves if desired.
