Nourish Veggie Bowl

Ingredients:

  • 1 Cup Brown Rice/Quinoa
  • 1 Can Organic Black Beans
  • 1 Carrot
  • 1 Garlic Cloves
  • 4 Leaves of Chard
  • 1 Zucchini
  • 8 Small Mushrooms (any kind)
  • 1 Small Leek
  • 1/3 Cup Chopped Red Onion
  • 1 Tablespoon Olive Oil
  • Optional (Smoked “bacon” tempeh)

 

Dressing:

  • 1 Bunch Fresh Parley
  • 1/2 .Bunch Fresh Cilantro
  • 3 Whole Lemons Juiced
  • 2 Garlic Cloves
  • 1 Teaspoon Onion Powder
  • 1/2 Teaspoon Salt
  • 1 Tablespoon olive oil

 

  1. Cook Rice or quinoa according to package
  2. In a large sauce pan add one tablespoon of olive oil, chopped zucchini, onion , garlic and sliced leeks. Saute until zucchini is cooked and lightly brown.
  3. Add in chopped carrots and mushrooms and chopped chard.
  4. In a separate bowl heat black beans (make sure beans are rinsed thoroughly)
  5. In a small pan heat tempeh with a drizzle of olive oil until brown.

In a bowl add rice, black beans, veggie mixture, tempeh and then dressing.

 

Dressing:

In a food processor or bullet, puree parsley, garlic, cilantro, lemon juice, olive oil and salt and seasonings.
