Nourish Veggie Bowl

Ingredients:
- 1 Cup Brown Rice/Quinoa
- 1 Can Organic Black Beans
- 1 Carrot
- 1 Garlic Cloves
- 4 Leaves of Chard
- 1 Zucchini
- 8 Small Mushrooms (any kind)
- 1 Small Leek
- 1/3 Cup Chopped Red Onion
- 1 Tablespoon Olive Oil
- Optional (Smoked “bacon” tempeh)
Dressing:
- 1 Bunch Fresh Parley
- 1/2 .Bunch Fresh Cilantro
- 3 Whole Lemons Juiced
- 2 Garlic Cloves
- 1 Teaspoon Onion Powder
- 1/2 Teaspoon Salt
- 1 Tablespoon olive oil
- Cook Rice or quinoa according to package
- In a large sauce pan add one tablespoon of olive oil, chopped zucchini, onion , garlic and sliced leeks. Saute until zucchini is cooked and lightly brown.
- Add in chopped carrots and mushrooms and chopped chard.
- In a separate bowl heat black beans (make sure beans are rinsed thoroughly)
- In a small pan heat tempeh with a drizzle of olive oil until brown.
In a bowl add rice, black beans, veggie mixture, tempeh and then dressing.
Dressing:
In a food processor or bullet, puree parsley, garlic, cilantro, lemon juice, olive oil and salt and seasonings.
