Holiday Chocolate Cookies




2 cups organic all- purpose flour

1 cup organic fair trade unsweetened cocoa powder

1/2 teaspoon baking powder

1/3 cup butter (room temperature)

1/4 teaspoon of salt

1 1/2 cup organic cane sugar

2 teaspoons vanilla

1/2 cup powder sugar

1/2 cup semi sweet chocolate chips

4 eggs


Combined butter, sugar and vanilla in a mixing bowl; mix thoroughly then add the eggs in one at a time. Mx on low.

Then add in the dry ingredients to the wet ingredients; cocoa powder, salt, flour and baking powder. Then lastly add in your chocolate chips.

Let cool in the fridge for one hour.

Preheat oven to 350 F

On a cookie sheet, line with parchment paper  (I use unbleached parchment paper). In a separate bowl add your powder sugar. Scoop 1 1/2 inch balls and roll completely in powder sugar.

Bake for 12 – 15 minutes. Using a spoon gently press the cookies down to flatten them when they are warm.
