Hearty Grain Bowl (Vegan)

Ingredients:
- 4 Leaves Rainbow Chard
- 4 Leaves Green Curly Kale
- 4 Leaves Purple Curly kale
- 1/2 Small Leek
- 1 Cup Red Quinoa
- 3 Plant Based Sausages (https://tofurky.com/what-we-make/sausages/italian/)
- 1 Zucchini
- 1 Carrot
- 1 Serrano Pepper
- 8 Bella Mushrooms
- 2 Tablespoons of Olive Oil
- 1 Teaspoon Onion Powder
- 1 Teaspoon Garlic Powder
In a pot add you quinoa and water and cook according to the quinoa package.
In a large sauce pan, add 1 tablespoon olive oil, chopped zucchini, chopped carrots, sliced serrano, and sliced leeks. Add in your seasonings (onion powder and garlic powder). Cook until lightly golden brown. Then add in your chopped mushrooms. Cook for an additional 3 minutes.
Chop up you chard and throw on top of the veggies and cook for another 2 minutes. Set aside.
In another sauce pan add 1 tablespoon of olive oil. Add sliced sausage and cook for 4 to 6 minutes until lightly brown on both sides.
Dressing:
- 4 Lemons
- 2 Garlic Cloves
- 1 Bunch of Organic Fresh Parsley
- 2 Tablespoons of Olive Oil
- 1 Teaspoon Onion Powder
- 1/2 Teaspoon Salt
In a bullet or blender. Puree all the ingredients together until pureed and mixed well.
Wash and dry your kale, Chop up the Kale and add into a bowl, top with chard and veggie mix, quinoa, sausage and dressing.
