Dairy Free Beef Stroganoff

Ingredients:
- 1 Package of Egg Noodles
- 2 Teaspoons Vegetable Oil
- 1 Shallot
- 1 Yellow Onion
- 1/2 Leek
- 1 Package (8 oz) Bella Mushrooms
- 3 Garlic Cloves
- 1 1/2 Cup Vegetable Broth
- 1 1/2 Cup Unsweetened Almond Milk
- 4 Teaspoons Soy Sauce
- 3 Teaspoons All Purpose Flour
- 2 Teaspoon Dijon Mustard
- 2 Tablespoons Nutritional Yeast
- 1 Teaspoon Paprika, Red Pepper Flakes or Cayenne Pepper
- Salt and Pepper to taste
- Optional; Parsley
Meat Option:
- 1 Package of 16 oz Organic Grass Fed beef
- Salt and Pepper to taste
- 2 Teaspoons Red Pepper Flakes
- 1 Teaspoon Onion Powder
- Chop all your shallots, onion, garlic, leeks and slice the mushrooms.
- Boil water and cook egg noodles according to package.
- In a large pan add a drizzle of olive oil and saute the shallots, onion, garlic, and leeks until golden brown. Then add in your sliced mushrooms.
- Whisk together vegetable broth, soy sauce, dijon mustard, flour, and nutritional yeast. Then stir in milk (all added to sauted veggies).
- Add in egg noodles and serve with fresh parsley 🙂
If adding meat:
- In a large sauce pan or cast iron add olive oil and break up the meat; add all seasonings and cook until brown and thoroughly cooked all the way through. About 5 minutes.
- Add to Stroganoff and mix well.
