Arugula Pear Salad with Champagne Lemon Dressing
Serves 2 to 4
Ingredients:
- 4 oz Organic Arugula
- 2 Pears (any kind)
- 5 Tablespoons Pumpkin Seeds
- 1/4 Red Onion
- Optional; Viola Flowers
Dressing:
- 1/8 Cup Olive Oil
- 2 Tablespoons Champagne Vinegar
- Juice of 2 Lemons
- Mix all dressing ingredients together and mix well.
- Wash and dry your arugula.
- In a large bowl add arugula, thinly sliced red onion, thinly sliced pears, pumpkin seeds, (optional viola flowers), and top with dressing.
- Enjoy!
