Arugula Pear Salad with Champagne Lemon Dressing

 

Serves 2 to 4

Ingredients: 

  • 4 oz Organic Arugula
  • 2 Pears (any kind)
  • 5 Tablespoons Pumpkin Seeds
  • 1/4 Red Onion
  • Optional; Viola Flowers

 

Dressing:

  • 1/8 Cup Olive Oil
  • 2 Tablespoons Champagne Vinegar
  • Juice of 2 Lemons
  1. Mix all dressing ingredients together and mix well.

 

  1. Wash and dry your arugula.
  2. In a large bowl add arugula, thinly sliced red onion, thinly sliced pears, pumpkin seeds, (optional viola flowers), and top with dressing.
  3. Enjoy!
